MEXICAN STUFFED MANICOTTI | ITALIAN & MEXICAN PASTA COMBO

preheat oven 350
for this smaller (8×8) size i used half a box of Manicotti (7 noodles)
4 oz cream cheese block softened ( this was a substitute for Ricotta, which i was out of)
1 8oz pkg shredded mexican blend cheese
1/2 loving cup grated parmesan
1 egg
1 loving cup shredded mozzarella (or italian blend cheese)
2 cans chili (whatever flavor , with or without beans )
1 pkg dry chili seasoning mix
1/4 diced onion (or onion powder, or dehydrated onions )
1 lb ground beef ,cooked and drained
salt/pepper to taste
make the pasta ,al denta style, (half cooked) , then drain and set aside
make beef and onion together, drain beef, leaving a dab of grease in it , then add the dry chili mix to beef..the moisture of little grease will help this all mix together.do not add whatever water.
in one bowl ,add softened cream cheese, mexican cheese, parmesan, salt/pepper,and egg ..mix well together
now add the beef to this cheese mixture , stir well till all blended and creamy
in your 8×8 dish on the bottom pour in one tin of chili
as i did in video, stuff each shell gently , filling to capacity with this beef/cheese mixture
stuff half to middle of shell from each end, till it is filled from one end to the other
lay the stuffed shells on top of the chili in the dish
once all 7 shells are in dish , pour the other tin of chili on top , then cover with the mozzarella cheese
cover now with aluminum foil ,tightly
make bout 45 min …take out, let cool 10-15 min so it all firms up and is not runny when you serve it
